Dairy
This week’s emergency preparedness level up challenge (dairy):
1 - I have at least 1 lb. of shelf-stable dairy products stored at home.
2 - I have enough powdered milk or shelf-stable dairy to feed each person who lives in my home for three months.
3 - I have at least 7 lbs. of three different types of dairy products stored for each adult in my family (e.g., canned cheese, evaporated milk, freeze-dried cheese, powdered cheese, powdered milk, shelf-stable milk, sweetened condensed milk, etc.)
4 - I have 30 lbs. of dairy products stored for each adult in my family.
5 - I can substitute powdered dairy products in my normal recipes.
1 - I have at least 1 lb. of shelf-stable dairy products stored at home.
2 - I have enough powdered milk or shelf-stable dairy to feed each person who lives in my home for three months.

Fruits & Vegetables
This week’s emergency preparedness level up challenge (fruits and vegetables): [Note: It is very important to store sources of Vitamin C to prevent scurvy and other diseases]
1 - I have one can of canned, dehydrated, dried, or preserved fruit or vegetables stored at home.
2 - I have stored enough canned fruits and vegetables to give each family member at least one serving per day for one week.
3 - I have a garden that produces enough fruits and vegetables to feed my family one serving per person per day OR I have canned, stored, and preserved enough fresh fruits and vegetables to feed my family one serving per person per day.
4 - I have stored a VARIETY of canned fruits and vegetables (enough for each family member to have least three servings per day of foods they will eat).
5 - I have stored a variety of vitamin and mineral supplements (especially Vitamin A, B-6, C, D3, E, calcium, iron, magnesium, probiotics, and zinc).
Grains
This week’s emergency preparedness level up challenge (grains): [Note: Beans and rice served together make a complete protein--see Legumes & Proteins for more ideas]
1 - I have one box mix at home (for bread, muffins, rolls, or pancakes).
2 - I have enough box mixes at home to make bread, muffins, rolls, or pancakes for the people who live with me for one week.
3 - I have one 5-lb. bag of flour at home.
4 - I have one bucket of rice, oats, or wheat at home.
5 - I can make bread or rolls from scratch.
Leavening Agents
This week’s emergency preparedness level up challenge (leavening agents):
1 - I have one box of baking powder at home.
2 - I have 1 lb. of leavening agents for each adult who lives with me.
3 - I have at least three different types of leavening agents stored at home (e.g., baking powder, baking soda, cream of tartar, flax seeds, powdered eggs, yeast, etc.).
4 - I have at least 6 lbs. of leavening agents stored for each adult who lives with me.
5 - I know how to make my own baking powder and/or how to substitute different leavening agents for one another.

1 - I have one can of legumes at home (baked beans, black beans, garbanzo beans, kidney beans, lentils, lima beans, nuts, pinto beans, refried beans, split peas, white beans, etc.).
2 - I have enough dry beans (and rice) at home to make beans (and rice) for the people who live with me for one week.
3 - I have at least 14 lbs. of dry legumes at home.
4 - I have 60 lbs. of legumes (canned or dry) at home.
5 - I can prepare and season dry legumes from scratch.
Oils & Fats
This week’s emergency preparedness level up challenge (cooking oil):
1 - I have one extra can of cooking spray at home (besides the one that I am currently using).
2 - I have at least one small container of cooking oil (16 oz.) or shortening at home.
3 - I have at least one gallon (or more) of cooking oil or shortening (1 lb.) at home.
4 - I have three or more types of shelf stable cooking grease or cooking oil at home (e.g., avocado oil, bacon grease, canola oil, Crisco, lard, shortening, olive oil, peanut oil, vegetable oil, etc.)
5 - I know how to tell if my cooking grease/oil is rancid OR I know how to use it for light.
Proteins
This week’s emergency preparedness level up challenge (proteins): [Note: Beans and rice served together make a complete protein--see Legumes for more ideas. Also, keep in mind that dried nuts go rancid so they should not be used for long-term storage.]
1 - I have one can of prepared food that includes protein in it (such as almond butter, beef jerky, beef ravioli, canned beef, canned chicken, canned pork, canned salmon, canned sardines, canned tuna fish, canned turkey, corned beef hash, dried nuts, peanut butter, Vienna sausages, etc.) at home.
2 - I have enough canned meat, nut butter, or dried nuts to make sure my family has protein every day for one week.
3 - I have enough canned meat, nut butter, or dried nuts to make sure my family has protein every day for one month.
4 - I know where and how to find, catch, clean, and cook fish.
5 - I know where and how to find, hunt, clean, and preserve game.

3 - I have at least three or more types of salt at home (e.g., bouillon, sea salt, soy sauce, table salt, etc.)
4 - I have stored at least 6 lbs. of salt for each adult who lives with me.
5 - I know how to use salt to preserve food.
1 - I have one container of salt at home.
2 - I have a week's supply of salt for each person who lives with me (1 lb. per adult).
3 - I have at least three or more types of salt at home (e.g., bouillon, sea salt, soy sauce, table salt, etc.)

Sugars
This week’s emergency preparedness level up challenge (sugars): [Note: Honey and molasses can be stored nearly indefinitely. White sugar also lasts a long time if stored in a cool, dry place.]

2 - I have a week's supply of sugar for each person who lives with me (1 lb. per adult).
3 - I have at least three or more types of sugar at home (e.g., brown sugar, honey, maple syrup, molasses, white sugar, etc.)
4 - I have stored at least 60 lbs. of sugar for each adult who lives with me.
5 - I know how to soften stored sugar that has hardened.
1 - I have one 5 lb. bag of sugar at home.
2 - I have a week's supply of sugar for each person who lives with me (1 lb. per adult).
3 - I have at least three or more types of sugar at home (e.g., brown sugar, honey, maple syrup, molasses, white sugar, etc.)
4 - I have stored at least 60 lbs. of sugar for each adult who lives with me.
5 - I know how to soften stored sugar that has hardened.
Water
This week’s emergency preparedness level up challenge (water): [Note: Water must be rotated.]
1 - I have one case of bottled water at home (or 5 gallons).
2 - I have a three days' supply of at least one gallon of water per person per day.
3 - I have two weeks worth of water stored per person (minimum of 1 gallon of water per person per day).
4 - I have filled and stored a food-safe 50-gallon container/drum with clean water at home.
5 - I can purify water using at least two different methods (boil, water filter, water purification tablets, etc.).
1 - I have one case of bottled water at home (or 5 gallons).
2 - I have a three days' supply of at least one gallon of water per person per day.
3 - I have two weeks worth of water stored per person (minimum of 1 gallon of water per person per day).
4 - I have filled and stored a food-safe 50-gallon container/drum with clean water at home.
